Яйце є одним із найдавніших харчових складників. У давніх народів воно було символом життя і це вірування проявилось у наших писанках, на яких писанкарки наносять символічні знаки.

Про яйце сказав хтось, що воно є приятелем кухаря, бо виступає в різнородних стравах. Воно в'яже харчові складники, надає пухкости, смаку та й саме може стати стравою.

Свіжість яйця має велике значення при використанні його. Тому стараємось провірити це різними способами. Коли розіб'єте яйце і жовток і білок добре розділюються, то це є доказом їх свіжости. Це дуже важливе при білку, з якого маємо вбити шум. Коли білок густий і суцільний, а не рідкий, то з нього шум скоріш уб'ється.

Перед уживанням яйця слід його старанно помити, не зважаючи на те, чи хочемо його зварити чи йнакше зужиткувати. На лушпині яйця можуть бути заразки, що перейдуть тоді до страви.

Розбиваємо яйце найкраще вдаряючи гострим ножем у лушпинку ближче тоншого кінця.
