7. Печиво

Печиво все було в Україні поважним складником харчування. Багата українська земля щедро вирощувала пшеницю й жито і це стало підставою нашого печива. Поруч найбільш поширеного продукту — хліба — випікали більш делікатні його відміни — паляниці, книші, булки, баби. А згодом із додатком скорому, себто товщу, яєць, цукру чи меду — постали інші відміни тіста, що дають делікатне вибагливе печиво.

Печиво ділимо на такі засадничі групи: 1. Дріжджеве, 2. Крихке, 3. Бісквітне, 4. Медяникове, 5. Листковане, 6. Заварне. Рід тіста залежить від його складників і способу приладження.

Вибагливе печиво відзначається запахом. Найбільшіе вживали у нас справжньої ванілі, доволі часто цитринової й помаранчевої шкірки, подекуди цинамону, руму, затираної троянди, гіркого мигдалю.

Окреме місце займало в нашому харчуванні обрядове печиво. Найбільш відомим був у Різдвяному часі медяник, у Великодньому часі паска, бабка й сирник, а на весіллях коровай чи колач. За душі померлих жертвували книші. Подаємо й тут кілька вказівок щодо приладження тих виробів.

Заграничні туристи, що відвідують Україну, однозгідно хвалять її печиво щоденного вжитку. Хліб і булки не мають собі рівних в Евролі. Отак довголітня традиція нашого печива перемогла все лихоліття, що його переходила наша Батьківщина.

СТРАВИ СВЯТ-ВЕЧІРНЬОГО СТОЛА:
По середині Різдвяна булка. У малій мисочці кутя, у більшій борщ. Зліва на полумиску холодець із риби, на подовгуватій тарілці риба смажена. Справа вареники і голубці, а поруч них ушка до борщу. У скляній посудині — узвар. За ним на скляній підставці медяник.

Зліва направо: маківник, медяник, цвібак і рогалики.
